Tracey Lister, a chef from Melbourne and her journalist husband Andreas Pohl met Vietnamese-Australian Jimmy Phamthey in Vietnam. Jimmy had set up a sandwich shop in Hanoi to provide training and provide jobs for street kids in Hanoi.
Inspired by Jimmy's vision, they quickly joined the project, helping KOTO to become an 80 seat restaurant and organisation that has over 100 trainees in the program at any given time.
As part of their KOTO journey Tracey and Andreas have produced a stunning book that is part cook book and part travelogue.
