         <title>Issue 22 SPICE Autumn 2011</title>

<p>We like Autumn a lot. It's very SPICE and what sets us apart and out in front.</p>

<p>Leading the charge for this issue is milk. Milk's one of our most fundamental foods and yet the industry is one of the most hard done by - now finding itself in the middle of a damaging supermarket war. Sarah Green speaks with four local and independent milk producers to hear their stories. Rob Campbell frames the issues in terms of almost two decades of deregulation. Margaret Johnson shows us how to cook with milk. Sophie Zalokar makes butter. And our cover features Emma and Tom of Cambray Cheese, who speak with Carole Watson about turning sheeps milk into lovingly crafted cheese.</p>

<p>Anthony Williams asks why beers on tap are so samey and Wally Graham explains why noodle wheat is one of our premium crops. Vince Garreffa demystifies and stops us being so scared of offal. And Harvest, Gala, and the Old Pantry share their recipes for some beautiful dishes. We travel up to Kalamunda for our regional guide; profile two gorgeous cafes and their owners in Bayswater - Mrs S. and Sherbert. We travel out to Mt Barker to Maleeya's Thai Cafe for jungle curry and fishcakes and Megan Anderson sails the north on True North. We speak with Naoki Kobayashi of Nao and his dream of selling one thing -ramen, and Athanae Lucev learns how to cook vegetarian. Chef Helen Pratt meets up with three female winemakers from Madfish, Fermoy Estate and Houghton wines, matches their flavour profile, and ends up making a soufflé, steak, and redskin ice-cream. </p>

<p>Ben Mitchell speaks with Bernie Eisner about gardening in prison, Verity James talks plums and free-range chickens, and Sabrinah Hahn grows spuds. Jason Boudville and the panel tastes wines from the small, southern and upcoming Porongurup region. Kate Haycock goes all metal, Allan McMurray makes a case for decaf coffee and Matt O'Donohue and Jennifer Susanto-Lee review city restaurants and restaurants with vistas. <br />

<p>If you're heading north for the holidays we thought you might welcome a look at our guide to fish and chips along the route. We cover all the places, from Dongara to Kalbarri, we knew served locally caught seafood. Since the Summer issue's been out, Jess from The Gorges Café, Grey St, Kalbarri, has been in touch to let us know they too source their fish straight off the boat that pulls in across the road from their cafe on the banks of the Murchison River. They serve breakfast, lunch, WA-owned 5 Senses coffee, fresh daily baked muffins and cakes and of course, fresh Western Australian and locally caught fish. So, add them to the list and safe traveling.</p>

         <title>Correction! - Issue 21</title>
         <description><![CDATA[<p>Thanks to a sharp-eyed subscriber there's a discrepancy in egg parts between the ingredients and the instructions for the Torta di Nocciola on page 4.</p>

<p>The instructions should read: "Place sugar in mixer bowl and add egg <b>yolks</b> and then the whole egg"</p>

<p>Sincere apologies from us, all our fault, and frankly we're pretty embarrassed about the mistake as we go to considerable lengths to ensure every issue goes out accurate and clean.</p>]]></description>

Waiting, waiting for Summer to come back from the printers. Dum de dum ... anyway it's Russell Blaikie's birthday today and he's in our Summer issue talking about his own work at Must and the producers he works with; illustrated by some gorgeous by Craig Kinder. So this reminded us that when Chris Cheong was at Must Margaret River did some lovely work with steak in issue 15 and we'd forgotten, somehow, that we promised ourselves make lot's of whisky cinnamon julips.          <title>Slow Food Perth Food Ethics Forum ‘Food sovereignty: what’s on your plate?’</title>
         <description><![CDATA[<p>'Food sovereignty' - the right of local people to decide what they grow and eat - is a term well understood in communities with a long tradition of small-scale farming. In Australia, where big farming tends to dominate, and our place in a global market means that once-seasonal fruits and vegetables are available year-round, 'food sovereignty' might be seen as irrelevant. But a burgeoning interest in knowing where your food comes from - who grows it, is it local, and how it's grown - together with a heightened awareness of the cost of 'food miles' and the effect of genetic modification in staple crops, is encouraging support for local farmers’ markets and prompting questions at the local butcher. <br />
Christ Church’s Canon Frank Sheehan, farmer Annie Kavanagh, editor Anthony Georgeff, food academic Felicity Newman, former agriculture minister Kim Chance and parliamentarian Max Trenorden will discuss ‘Food sovereignty: what’s on your plate?’ in an Ethics Centre forum in the school chapel on Tuesday 24 August at 7:30pm. <br />
The forum is presented with Slow Food Perth, the local branch of the international food awareness organisation. Among its Australian members are chefs Maggie Beer and School Kitchen Garden Foundation chairman Stephanie Alexander. <br />
Forum entry is by gold coin donation to Anglicare.</p>

         <title>SPICE Contributors Pinot Tasting Snack Recipes</title>
         <description><![CDATA[<p>Usually, once the serious business of the SPICE wine appraisal is over, we burn the remaining wine in a giant bonfire. This time however we thought we'd use what was left to lure our contributors out of their chilly garrets to try the two dozen local and Mornington Peninsular Pinots we had for the spring issue. All good fun and there were a couple of requests for recipes of the food we had - rillettes and a trout dip thing. The rillettes used some other fruit of the upcoming spring issue - the meat from Vince Garreffa's home-smoking photo shoot. <br />
So in the spirit of providence, we thought we'd pop the recipes up - read over the fold.</p>]]></description>

         <title>WA win for Jeune Chefs Rotisseurs</title>
         <description><![CDATA[<p>Fans of real-life chefs getting down to it will be pleased to know that WA chef, Luke Wakefield, has taken out National honours in the <em>Jeune Chefs Rotisseurs. </em>The <em>Jeune Chefs Rotisseurs </em> is organised by La Chaine des Rotisseurs and is a devilishly tricky 'Black Box' competition. Chefs are given a must use list of ingredients - here it was whole snapper, duck legs, rhubarb, and fennel - and are then give 30 minutes to compose a menu and then 3 hours to cook 4 dishes each of an entree, main course and dessert.<br />
Luke Wakefiield is of Chez Pierre in Perth and North Star Cruises in the Kimberley and will be going to the finals in Helsinki in September. We've popped his final menu over the fold.<br />
