<p>Menacing us on the cover with the ferocious local freshwater crustacean, marron, is Bistro Felix chef Helen Pratt. Helen's responsible for our French-flavoured but local Seasonal Menu using local veal, marron, blueberries, scallops and some purslane that she purloined from her home.</p>

<p>If you're not familiar with our Seasonal Menu, we take local produce featured in stories in the issue and ask a local chef to create a menu in their own style. So we follow the ingredients back to the dairy farmer behind humanely raised White Rocks veal, the Denmark farmers taking on the challenges of growing blueberries, a local marron expert on optimal marron farming, and Swan Valley goat farmers. </p>

<p>A great sweep of chefs and their work in Autumn - Matt Stone of Greenhouse, Silas Masih of Greenpool, Xavier Poupel of Stonebarn Lodge, Greg Peppall of Lime 303, Richard Spencer at Beaufort Street Merchant, Chris Cheong at Must MR, Kevin Ryan of The Lake House, and Jihad and Chris Moussallem of The Prophet. Have your way with goats curd, marron, figs and raspberries, trout, goats cheese souffle, prawns, blueberries, lemon and polenta, and green beans.</p>

<p>Lovely work from Vince with veal, Theo with Snapper, Verity with seasonal veg, Marg with rolling, and Sabrina with growing left-of-centre veges. Jason does a lovely job with WA's unusual wine-varietals that'll have you wowing them at the wine store. Isobel goes to BBQ school, Jennifer goes to kid-friendly restaurants, Matt goes all post-modern, and Anthony looks at the beer that the deomgraphically diverse northern suburb's produce. Sarah relects on cakes and Kate speaks with furniture maestro, John Goulder.</p>

<p>As long time admirers of their craft, we're pretty excited about this. SPICE is proud to get behind this year's Butcher's Picnic in Northbridge.</p>

<p>The Butcher's Picnic is a day to celebrate the skilled saucy talking masters of meat and craftsmen of cuts, butchers. Heaps of activities for all the family with sausage making demonstrations and blind-tasting competitions. Watch the battles as apprentice butcher's race the clock to bone a leg of lamb and home-chefs have at it in a hogget cook-off. This year sees butchers from around the state vie for the Beef Burger Crown and some of WAs best produce there for the tasting. It all happens in the new new Northbridge Piazza on Sunday the 28th of March.</p>

Headlining the Avenue are chefs Peter Manifis and Gabriel Zahra, presenting the Southern Forests abundant produce – marron, truffles, trout, lamb, beef, cheese, nuts, wine, cherries to name a few. Should be a tremendous celebration of food in a region that's going leaps and bounds.</p>

<p>It's Western Australian Biodynamic Festival at High Vale, Pickering Brook, this Sunday (22 Nov). </p>

<p>The festival runs from 10am to 4pm at <a href="www.highvale.com">High Vale Orchard</a>, 35 Merivale Road. Our friends at Slow Food will be there making and selling wood-fired pizza and Pickering Brook's own Champion roasted-mushrooms to raise funds for next year's Western Australian Terra Madre delegation and thier school kitchen garden project, ‘Food with latitude’, launched by Carlo Petrini in Perth last month [see SPICE 17].</p>

<p>There will be orchard tours, tree-pruning demonstrations, talks at 11:15am and 2:15pm by Williams farmer and 2006 Terra Madre delegate William Newton-Wordsworth on 'social responsibility and agriculture: contradiction or necessity?', and cooking demonstrations by chef Nico Moretti. [see   15]</p>

<p>And, of course plenty of things for the kids and lots of produce.</p>]]>
